507 - Bianco Lazio IGT is a pure and unfiltered expression of the Procanico grape, from vineyards growing on volcanic soils with a mix of sand and tuff. Located at an altitude of 436 metres and with favourable southwest exposure, the grapes develop a distinct minerality and complexity. The vines, with an average age of nine years, produce a limited but high-quality harvest that is carefully selected by hand and transported to the cellar in small crates.
Harvesting takes place in the last week of August, early in the morning to preserve freshness and aromatic intensity. Part of the harvest is set aside five days earlier to create a fermentation starter, after which the rest is added. After gentle pressing, the wine ferments spontaneously in stainless steel tanks, without temperature control, emphasising its natural character. It then ages for 11 months on fine lees in the bottle, where it further develops its structure and depth. The wine is bottled unfiltered and unclarified, with a subtle residual sweetness that enriches its lively and nuanced flavour.
This artisanal wine has a lively freshness and a pronounced mineral touch, with a slight cloudiness that underlines its authentic, natural character. Perfect as an aperitif or with refined dishes in which its elegant and complex flavours are fully appreciated.
