Alea is a white wine made from overripe Sauvignon blanc grapes. The vineyard from which this wine is made is in the lowest and most ventilated part of our estate. The bunches are defoliated at the end of August and remain on the plants until the end of October. The alternation of morning humidity and sunny and windy afternoons allows noble mould - called Botrytis cinerea - to develop on the bunches, leading to an enrichment of sugars and the development of certain aromas. The grapes, once harvested, are pressed using a manual press. The must then ferments in barrels and the wine is aged in these same wooden vats for at least 18 months.
