The 'Amor' Blanc IGP Pays d'Oc from La Criox Martelle is a greenish-yellow white wine made from 90% Sauvignon Blanc and 10% Marsanne and is best enjoyed with seafood, grilled fish, a spicy tagine and blue-veined cheeses.
Located between the vast plains of Minervois and the hills of the Causses de Minerve, in the commune of Cesseras, this wine offers a beautiful expression of its terroir. A blend of 90% Sauvignon and 10% Marsanne is produced under the IGP Pays d'Oc appellation. The vineyard management has been following the principles of organic farming since 1998, allowing the wine to reach its full potential.
The grapes are harvested at night to preserve their freshness. Upon arrival at the winery, the grapes are destemmed and pressed immediately. The juice is macerated in a stainless steel tank under temperature control. Vinification takes about 10 days.
This wine has a bright colour with green reflections and an expressive nose with aromas of lemon and wonderful minerality. On the palate, it starts with notes of white flesh, a creamy texture and pleasant acidity, resulting in a long finish.
Served as an aperitif, AMOR pairs perfectly with a plate of seafood, grilled fish, a spicy tagine and blue-veined cheeses.
