The 'Aquapazza' Colli Piacentini DOC Malvasia from Podere Pavolini is a white wine made from 100% Malvasia di Candia and is best enjoyed with foie gras, fish and shellfish, pumpkin, and lightly aged cheeses.
This dry, white wine from the Colli Piacentini D.O.C. Malvasia region in Emilia-Romagna is made from 100% Malvasia di Candia aromatic grapes. The vineyard, which covers almost 5 hectares, is located south of the winery on a hilly terrain with fertile soils. The grapes are harvested by hand in late August when they are well ripe.
The process of making the wine starts with gently pressing the grapes to get their juice. This is done in a special press that prevents oxygen from reaching the juice. The juice is then divided and some of it is poured into oak barrels to ferment, while the rest goes into concrete tanks. After fermentation is complete, the wine is stored until the following spring and then bottled.
At bottling, the wine has an alcohol content of 12.5%, a little residual sugar, and fresh acidity. On tasting, the wine has a nice yellow colour with golden reflections. You can smell and taste citrus aromas and flavours, as well as hints of peach and spices. It is a dry wine with a good balance between acid and sweet.
The wine goes well with dishes such as foie gras, fish, pumpkin dishes and cheese. About 6,600 0.75-litre bottles of this wine are produced per year. In 2023, the wine even won a silver medal at the Concours Mondial de Bruxelles, showing that it is an esteemed wine.
