Product description
AT - Bianco Lazio IGT is a unique amphora-vintage wine made from 100% Procanico grapes. This wine is produced using an artisanal and minimalist process, in which the grapes are harvested by hand early in the morning and taken to the cellar before lunch to preserve their freshness. Fermentation and aging take place in terracotta amphorae, which ensures a pure and authentic character.
The wine macerates for five months on the skins, leaving 30% of the mass in contact with the must, and then ages for another five months on the fine lees. This process enhances the wine's structure, minerality and aromatic complexity. Fermentation is spontaneous with a natural pied de cuve, prepared in the vineyard and added after pressing and destemming. The wine is not clarified, not filtered and no sulphites are added, which allows it to retain its full expression.
Thanks to the volcanic soil, consisting of a first sand layer and a tufa subsoil, AT - Bianco Lazio IGT has a distinct freshness and subtle minerality. With an alcohol content of 12.5% and total acidity of 4.5 g/l, this wine offers a delicate balance between structure and elegance. Only 660 bottles are produced annually, making it an exclusive choice for lovers of artisanal, natural wines.
