Vinification: Harvesting is carried out in the early morning hours. The bunches are carefully removed from the stem and the grapes are transferred to a tank where a 12-hour maceration takes place at a temperature of 10 degrees. A gentle pressing at low pressure follows, collecting only the juice which will become the final wine. At the end of alcoholic fermentation, the wine matures for 6 months in stainless steel tanks under periodic "battonages" to re-suspend the lees, facilitating yeast autolysis and increasing the wine's mouthfeel. Once bottled, the wine remains in our underground cellar for at least 3 months.

Uvamatris is located in Sala Monferrato in the northern part of the Monferrato region of Piedmont. Gabriele Ronchi is the young winemaker and owner. Located at the top of a rolling hill about 264 metres above sea level, the estate stretches over 6 hectares, four of which are planted with vineyards of Barbera, Nebbiolo, Chardonnay and Merlot.
