The 'Benintende' Chianti Superiore DOCG from Tenuta Scrafana is a red wine made from 100% Sangiovese and is best enjoyed with Tuscan meats, veal, lamb and goat cheese.
This Chianti Superiore DOCG from Tenuta Scrafane is produced with Sangiovese grapes. The grapes are hand-picked and vinified separately in cement and stainless steel tanks at a controlled temperature of 25°C. Maceration lasts an average of 20 days, with daily pumping and délestages to achieve greater extraction. Malolactic fermentation is followed by an 18-month ageing in cement tanks. This red wine has a beautiful bright garnet-red colour, slightly intense. The bouquet offers elegant and intense floral scents of broom and violets, fruity plum and small red berries. The palate is slim and exuberant, dry, with tannins nicely present on a refined, elegant body, perfectly balanced between freshness and softness, with a long fine persistence on unexpected spicy notes. The alcohol content is 13.5% vol. This wine goes well with Tuscan meats, veal with tuna sauce, pappardelle with wild boar sauce, grilled chicken on the spit, roasted young goat meat with aromatic herbs, lamb in fricassee with artichokes. The recommended serving temperature is 14 - 16 °C and the glass type is a chalice with a medium to large bulge.
The name has a close connection with the Scrafana estate, as it was the name of an ancient farmer who, according to historical documents, was the first to cultivate this area. We do not know what Benintende looked like, because after carefully studying the few documents that exist, we have not found more than a single reference, anyway we wanted to pay tribute to him by depicting him on the label. We imagine him as a humble, proud man who lives for the land and works hard every day to make the most of it.
