The Langhe DOC Rosato “Birbetta” comes straight from the hills of the Bassa Langa, where the winery uses Nebbiolo grapes to make this refined rosé. After a short 24-hour soaking, the skins are separated from the juice, resulting in a clear must after clarification. This must ferments at low temperature with selected yeasts for 25 to 30 days, preserving the complex aromas of the Nebbiolo grape.
This wine enchants with its bright rosé color and a distinctive, enveloping perfume reminiscent of ripe pear, wild strawberry and red currant. The taste is soft and velvety, with a subtle sweetness due to a slight residual sugar and the grape's elegant structure. A fresh acidity keeps it balanced without ever becoming overpowering.
The “Birbetta” is a perfect year-round match with antipasti, cakes and fish dishes. In summer, it shines chilled with grilled meat dishes or fried fish. Serve this wine at 10-12°C in a spacious glass to fully unleash its aromas.
