The 'Ca Celeste' Amarone Valpolicella Classico DOCG is a red wine made from Corvina, Corvinone and Rondinella that goes great with heartier dishes of red meat or game.
The wine has a deep and intense ruby red colour with a complex range of aromas on the nose of spices, liquorice, pepper and chocolate. Only the best grapes are picked for these wines, which are then left alone for 3 months. During this period, the grapes lose about 40% of their weight, leaving only the purest element of the grapes. In January, the grapes are then pressed in steel tanks after which fermentation begins. Part of the wine is then placed in oak barrels and the other part in 20 hectolitre barrels. After 24 months, these are blended and bottled in 0.75l bottles after which they are aged for another 12 months before sale. This Amarona has decades of ageing potential and should be drunk at a memorable moment.
The wine comes directly from the winemakers, they send the bottles themselves.
