Product description
The 'Caladoc' Terre de Camargue IGP from Mas de Rey is a pale pink rosé made from 100% Caladoc and is best enjoyed with lightly seasoned dishes, as well as with meat and fish dishes in tomato sauce.
A radiant pale pink colour with violet reflections precedes an expressive nose with aromas of peach. The palate combines liveliness, fullness and sweetness that persist on the fruit and sweet notes of English candy.
The Caladoc rosé can be enjoyed as an aperitif. It also goes perfectly with lightly spiced dishes from elsewhere (tagine, paella, chilli con carne) and also goes well with meat and fish dishes in tomato sauce.
The Caladoc is one of the estate's oldest grape varieties. Particular attention is paid to its vinification. Harvested during the night, the grapes are protected from oxygen with carbon dioxide directly on the plot. After harvesting, they are chilled. The tanks are inert before the juice is received by direct pressing. The yeasts ferment between 15°C and 18°C to obtain a wine with complex aromas of red fruits and citrus. Daily stirring with nitrogen helps to suspend the lees and thus enhance the aromatic profile.
