'Cesare' is a characterful red wine from the alluvial clay soils of Allerona Scalo, in the heart of Umbria. This 100% Merlot is produced with great attention to terroir and minimal intervention, resulting in an authentic and pure expression of grape and soil. The grapes are grown using the Guyot method and harvested with a limited yield of 50 quintals per hectare, which contributes to the concentration and finesse in the final result.
After harvesting, alcoholic fermentation takes place in stainless steel tanks for eight to nine days at a controlled temperature of 23°C on average. The wine then matures for four months in oak barrels of varying provenance and toast levels, before further refining in steel for a further three months. This careful ageing gives the wine its roundness and structure, without losing its fresh fruitiness.
What sets 'Cesare' apart is the pure working method in the cellar. The wine is not filtered or clarified, and the use of sulphites is kept to an absolute minimum, applied only during the necessary crossing moments to monitor quality during ageing. In the glass, Cesare presents itself with a garnet red colour and a lively aroma, in which ripe red fruit, spicy notes and a subtle wood influence come together in an elegant and balanced wine. A tribute to pure viticulture and classic finesse.
