This natural wine is an enchanting white wine that takes you on a journey of elegance and freshness. The wine's bright, pear-like colour is embellished by beautiful silver reflections. The nose unfolds a harmonious interplay of floral notes, candy, butter and toasted aromas, all immersed in a fresh and marine atmosphere.
The precise palate reveals wonderful volume and subtle balances. Here, freshness mingles with notes of candied lemon, a touch of saltiness and tender, gentle toasted notes. The finish is persistent and characterised by a pleasing saltiness.
The wine is composed of 90% Grenache blanc and 10% Clairette, from old organically grown vines on clay and limestone soils. The grapes are lovingly harvested by hand by men and women passionate about artisanal work, with a yield of 20hl/hectare.
The wine undergoes natural fermentation without the addition of any ingredients in the old barrels and 50% matures in an earthenware jug. Both vinification and ageing are done without the use of SO2. At bottling, nature is allowed to take its course; the wine is not clarified or filtered, with only a homeopathic dose of SO2 added.
