Product description
Concubine Passito Bianco IGT Veneto is Bigagnoli's winemaker's personal interpretation of sweetness. This passito is not a wine to be analysed, but to be enjoyed - a seductive and gentle embrace in liquid form, meant to be drunk without worry. It is a tribute to the subtle power of Garganega and the beauty of simplicity and enjoyment.
The grapes for this wine grow on the Morainic hills around Cavaion Veronese and Calmasino di Bardolino. They are harvested by hand in small crates and then dried naturally until mid-December. After gentle pressing, the must ferments until the desired alcohol content is reached. By then abruptly stopping the fermentation with cold, the wine retains its natural residual sugar. It then ages for at least a year in stainless steel vats to retain its freshness and purity.
The result is an atypical sweet wine with less than 100 grams of residual sugar per litre, which never feels heavy thanks to its lively acidity. In the glass, it shines with aromas of dried apricots, tropical fruit, yellow-flowered notes and hints of nuts. The Concubine is a perfect match with desserts and dry patisserie, turning any occasion into an intimate moment of enjoyment with its finesse and elegant sweetness.
