Product description
The Cumparone is a red wine made from 100% Nerello mascalese and is best drunk with starters in general, especially those with vegetables and fish. It can also be paired with pasta white meat and seafood.
The grapes for Cumparone undergo a careful manual harvest, after which they are carefully destemmed and pressed. Spontaneous fermentation takes place in stainless steel tanks using indigenous yeasts present in the skins. A maceration on the skins for a period of 20 days follows. The wine matures in stainless steel tanks for about 6 months, with no clarification, filtration or addition of sulphites. The result is a masterpiece of freshness and juiciness that immediately captures our hearts for its boundless goodness. The Nerello Mascalese grapes are harvested before they are fully ripe, from plants that are pruned only when there is an actual need, resulting in berries full of pure vitality. The wine reveals notes of small red fruits, saltiness, Mediterranean spices, and takes you away... you're flying to Pantelleria!
Cumparone makes an excellent pairing with traditional Italian dishes, especially with red meat, dishes with tomato sauce and mature cheeses. The recommended serving temperature is 18°C.
