The Dolcetto d'Asti DOC from I Tre Poggi is a fruity, balanced red wine made from 100% Dolcetto and is best enjoyed with Tajarin (Piedmont's pasta dish), or Gnocchi with gorgonzola and walnuts.
In traditional Piedmont cuisine, Dolcetto is an indispensable companion. This everyday meal wine, fruity, balanced and enjoyable, is invariably on the table and is often served with bread and salami.
The winery harvests Dolcetto by hand, usually after the Moscato harvest in the third or fourth week of September. The grapes are carefully destemmed, crushed and kept in stainless steel tanks for fermentation at a temperature of 25-28°C. After a week of maceration, the must undergoes gentle pressing, with only the floral must obtained becoming Dolcetto. After malolactic fermentation, the wine ages for two months in old barriques before being bottled.
When poured, Dolcetto presents itself with a brilliant ruby colour and purple hues. The bouquet is inviting and fruity, with floral notes of violets, roses and geraniums, alongside fruity aromas of red fruits and cherries. Spicy notes of pepper and subtle hints of cocoa enrich the whole, while the acidity ensures a fresh and pleasant finish.
Serve Dolcetto at a temperature of 16-18°C. This versatile wine goes with almost any dish. Try it with tajarin, a long homemade pasta from Piedmont served with sausage ragout, or with potato gnocchi and gorgonzola walnut sauce.
