The 'Donna Terina' Passito naturale Dolce IGP Terre Siciliane is a sweet dessert wine made from 100% Zibibbo that pairs beautifully with pastries, dried fruits and chocolate.
This Zibibbo Passito, with the IGT Terre Siciliane classification and the name Donna Terina, is proudly produced in the enchanting territory of Marsala, about 150 metres above sea level in Italy. Made from 100% Zibibbo di Pantelleria, also known as Moscato di Alessandria, passito, the grapes are grown using the time-honoured process of hand-picking, carefully selecting and then spreading out on mats on the ground to slowly sunbathe and naturally wilt. After reaching an appropriate level of wilting, the grapes undergo gentle pressing and fermentation at controlled temperatures in steel tanks to extract Malaga's characteristic aromas (Zibibbo passito). Maximum permitted production is 40 hl per hectare, and the wine has a unique character. Colourful and vibrant, this wine exhibits a golden colour with coppery reflections. The bouquet is intoxicating, persistent, aromatic and rich in ripe fruit, with notes of apricot, dried figs, bitter orange and honey. The palate is sweet, aromatic and intense, balanced, enveloping, honeyed and finishes with the subtlety of almonds. With an alcohol content of 14% vol. and a sugar content of 140 g./l., this wine does not undergo wood ageing and has a minimum maturation of 4 months in bottle. The aging potential is at least one year, as required by the production regulations, although some vintages are kept longer for a more refined taste. Serve this wine chilled as an aperitif between 10 and 12°C, but also as a dessert wine between 16 and 18°C.
