The 'Due Stille' Verdicchio dei Castelli di Jesi DOC Classico is a white wine made from 100% verdicchio that goes perfectly with white meat, grilled vegetables or as an aperitif. The 'Due Stille' (two drops) is a project in collaboration with another winemaker Brocani. The wine comes from verdicchio grapes from two vineyards, both of which give unique characteristics to the wine. For instance, the grapes from Cimarelli's Coste vineyard give a nice structure to the wine while the grapes coming from Brocani's Follonica vineyard bring a freshness and elegance. The grapes are brought together and fermented at controlled temperature after pneumatic pressing before being aged for 12 months in oak barrels. After this, the wine is aged in bottle for another 12 months before it can be consumed. THE wine has hints of almonds, straw and citrus.
