Both young and old vines, grown with organic care and harvested by hand, contribute to a modest yield of 30 Hl/hectare in the 2022 vintage. The winery embraces a natural approach where fermentation occurs spontaneously without external additives. In the cellar, indigenous yeasts are given free rein. Vinification and ageing take place without SO2, mainly in stainless steel vats, with work on the lees by stirring.
At bottling, the wine is re-aged without SO2.
At bottling, nature is again given free rein. Unclarified and unfiltered, the wine receives only a homeopathic dose of SO2 during the bottling process. With an alcohol content of 13% vol., Entre Chien et Loup Rosé presents a coral colour and shows notes of small spicy red fruits like red currant or raspberry.
