Young vines, pampered with organic care, are harvested by hand, resulting in a modest yield of 25Hl/hectare in the 2022 vintage. In the cellar, fermentation is carried out naturally without external additives, with indigenous yeasts doing their job. A cold pre-fermentation infusion is followed by liquid-phase fermentation. Vinification takes place in stainless steel vats, followed by ageing in terracotta jars. The wine is vinified and aged without the use of SO2.

When bottling, we once again let nature take its course. Un-cleared and unfiltered, the wine receives only a homeopathic dose of SO2. With an alcohol content of 13.5% vol, Entre Chien et Loup Red presents itself with a beautiful, rather light ruby red colour and is characterised by notes of red fruit and white pepper.
The palate is full of the wine's natural flavours, with a hint of red fruit and white pepper.
