The Extreme Vin Rouge from Saint-Louis is an organic red wine made from 80% Négrette, 15% Malbec and 5% Cabernet Franc that deserves a fine meat dish or hearty cheese.
It is the flagship wine of Domaine Saint-Louis and the elegant and refined wine experience that reflects the rich tradition of Saint Louis. It is an organic wine full of tradition and complexity from 3 distinct grape varieties.
The vines are planted on soils of boulbène and sandy loam on the surface and clay a little deeper. This terroir is ideal for complex and rich wines.
You experience this complexity when you pour the wine (preferably aired for a while before drinking). The aromas are multifaceted with peony, black fruits but also wood and vanilla notes. The pleasant tannic structure adds extra complexity to the wine while remaining accessible. The grapes are harvested manually and, after pressing, vinified with as little added sulphites or indigenous yeasts as possible. The fermentation process takes 3 weeks and is followed by a 13-month ageing in oak barrels that gives the wine complexity and roundness.
The Extrem of Saint-Louis is rightly the flagship wine of this organic winery and is made for special moments and can therefore be kept for years to come until that special moment arises.
