This wine is produced from grapes grown on a small section of vineyard in Fauglia, amid the gentle hills of Pisa. The grapes are harvested by hand and carefully collected in crates before being processed in small stainless steel containers. The vinification process starts with an alcoholic fermentation on the grape skins at low temperatures to extract the aromatic properties of the grapes. The temperature is then raised to around 28 °C to achieve controlled extraction of tannins and colour. After alcoholic fermentation, the wine is transferred to 225-litre French oak barrels.
The wine is produced according to organic practices, with low yields per vine and with meticulous selection of grapes at harvest. This results in an engaging wine with a rich variety of aromas and good structure, which translates into a long-lasting taste experience on the tongue. "Ginevra" comes out best when served at a temperature between 18 and 20 °C. It is important to note that this wine has not been filtered, clarified or subjected to any other oenological treatment.
In terms of flavour and aroma, Ginevra has an intense ruby red colour. On the nose, there are clear notes of ripe dark red fruit that blend harmoniously with elegant hints of tobacco and spices. On tasting, the wine is both soft and powerful, with flavours of liquorice and ripe fruit perfectly balanced. The finish is sweet, long-lasting and lingering on the palate.
