Product description
This Grillo from western Sicily, from vineyards near Salemi, reflects the essence of the Mediterranean terroir with its sunny location at 240 metres above sea level and sand-rich soils. The grapes are harvested manually in September, carefully selected and sourced from five-year-old vines that ripen optimally under southern to south-eastern exposure.
In the wine cellar, gentle pressing and an eight-hour skin soak at a low temperature of 5°C are chosen to preserve aromas and structure. Fermentation takes place in stainless steel tanks at a controlled temperature of 16 to 18°C and lasts 15 to 20 days. After alcoholic fermentation, the wine matures for 90 days in tank and a further two months in bottle, gaining elegance and balance.
In the glass, the Grillo presents itself with a pale yellow colour and a delicate aroma of wild herbs and green apple. On the palate, the wine is harmonious, dry and warm, with lively acidity and a subtle, slightly spicy finish. The ideal serving temperature is 12°C, preferably in a closed tulip-shaped glass. This wine is an excellent accompaniment to fish dishes, delicate starters, cured meats and spicy main courses. A true Sicilian classic for those who love lively, characterful white wines.
