The Grillo DOC Sicilia is a white wine made from 100% Grillo that is best paired with fish dishes and grilled vegetables.
This wine is rated Indicazione Geografica Protetta and comes from the province of Trapani, with vineyards in Marsala and Mazara del Vallo. The area has a Mediterranean climate with mild winters, limited rainfall and a warm, well-ventilated summer. The vineyards are located a few metres above sea level and have medium-density soils, mainly consisting of sand and light clay. The grapes are traditionally harvested by hand. This wine is made from the Grillo grape variety. Vinification is traditional, white wine-style with gentle pressing and fermentation at controlled temperatures. After maturing for about 4 months in stainless steel tanks, the wine is further finished in bottle. The alcohol content is 12% vol. The wine has a straw yellow colour, an intense and persistent aroma with floral notes of white flesh, mixed with hints of sweet spices. The taste is dry, subtly balanced, smooth and refreshing. This wine goes well with appetisers of smoked fish, seafood and fish dishes. It is recommended to serve this wine in a Bordeaux-type wine glass at a temperature between 8°C and 10°C. To best preserve the wine, a constant temperature of 16°C is required, with controlled light, and the bottles should be kept horizontally.
