'Imperator' Vino Spumante Extra Dry is a sophisticated sparkling white wine from western Sicily. The grapes are harvested by hand in the first days of August and come from eight-year-old vines growing on clay-rich soil at an altitude of 500 metres above sea level. The west-facing location ensures optimal sunlight and contributes to the ripening of the autochthonous grape varieties from which this wine is made.
In the cellar, it starts with gentle pressing and an eight-hour skin soak at a temperature of 5°C. Fermentation takes place in stainless steel tanks at 20°C and lasts 15 to 20 days, after which the wine ages on tank for 90 days. After an additional two-month maturation in bottle, it creates a balanced mousse with an elegant structure. The effervescence process is carried out in a controlled manner at low temperature, creating a fine pearlisation.
In the glass, the wine shows with a bright straw yellow colour. The aroma is slightly fruity with a vinous touch, while the taste is fresh and light, with a subtle bitterness that provides character and length. With an alcohol content of 11.5% and a residual sugar content of 15 g/l, this spumante is perfectly balanced. Serve 'Imperator' chilled between 8 and 10°C in a closed tulip-shaped glass. Ideal as an aperitif, but also an excellent companion to seafood, refined starters and even desserts.
