The 'Ipergea' Vino Passito Colli Piacentini DOC Malvasia by Podere Pavolini is a dessert wine made from 100% Malvasia di Candia and is best enjoyed with matured cheeses and dry pastries.
Ipergea is an expansive dessert wine with a broad and enveloping aroma of peach, citrus and exotic fruit, and a great flavour balance in which sweetness, alcohol content and acidity merge. Thanks to this harmony, the first sip opens and invites the next. It goes well with mature cheeses and dry pastries.
classified as Colli Piacentini D.O.C. Malvasia dolce passito 2014, this wine is made from Malvasia Aromatica di Candia grapes. Production involves manually harvesting the ripest and most extensive bunches in 20 kg crates to dry on racks. In addition, the greener bunches are harvested manually and processed using the ice wine technique. The grapes are pressed in January, after which the must is assembled, fermented and aged in barriques. Bottling takes place the following November.
The wine comes directly from the winemakers, they send the bottles themselves.
