The Isola del vento is a white wine made from 100% Zibibbo and is best drunk with matured cheeses, soft cheeses and shellfish.
Isola del Vento is a white wine macerated on the skins, obtained from old Zibibbo vines, grown as bush vines in the Pantesco heritage, declared by UNESCO as intangible human heritage. The vines are grown on predominantly loose volcanic soil, poor in organic matter. The grape harvest to produce this wine took place in the second decade of June, when the bunches reached phenolic maturity. The grape bunches were cut strictly by hand and then transported to small crates in the cellar, where they were destemmed and pressed. Fermentation began spontaneously using indigenous yeasts present in the skins. Maceration-fermentation lasted about 30 days.
Isola del Vento was aged for about a year in small steel tanks and then rested for almost two years in amphorae of about 500 litres. It was bottled in July 2020. No corrections or additives were made during processing, not even sulphur dioxide.
In the nose it is intriguing, an explosion of scents of the island: dried fruits, figs and apricots, and mineral notes. On the palate, it is fresh and salty, lightly tannic and free of residual sugar, making it particularly suitable for gastronomy. A wine with great structure and personality that goes well with aged cheeses, soft cheeses and shellfish. Serving temperature: 14 °C.
