La Produttoria - Est! Est!!! Est!!! di Montefiascone DOC is an authentic white wine from the heart of Lazio, produced on volcanic soils with a combination of sand and tuff. The vineyards are at an altitude of 436 metres with favourable south-west exposure, ensuring perfect ripening of the grapes and a pronounced minerality in the wine. The blend consists of 50% Procanico, 40% Roscetto and 10% Malvasia Lunga Toscana, yielding a complex and balanced palate.
The harvest takes place in the second half of September, in the early morning, with the grapes selected by hand and transported to the cellar in small crates. A small part of the must is prepared five days earlier as a fermentation starter, after which the rest of the grapes are added. After gentle pressing, the wine undergoes spontaneous fermentation without temperature control in stainless steel tanks for 15 to 20 days. It then ages for 11 months on fine lees and at least 12 months in bottle, developing depth and complexity. The wine is bottled unfiltered and unclarified to preserve its natural character.
This wine has vibrant freshness and refined aromatic intensity, with notes of ripe fruit, floral nuances and an elegant minerality. It is versatile, perfect as an aperitif or paired with delicate fish dishes, light pastas and soft cheeses. A characterful wine that reflects Montefiascone's unique terroir.
