The 'Lady Gio' Special Cuvée Brut Rosato from Podere Pavolini is a sparkling rosé made from 100% Pinot Noir and is best enjoyed as an aperitif, or with sushi, white meat, and spicy curries.
On the lands of Podere Pavolini, nearly 5 hectares of vineyards are cultivated, with pliocene origins. The Pinot Noir vineyard, located between 200 and 250 metres above sea level, uses an espalier training system. The grapes are strictly harvested by hand in 20-kg crates when they reach 10.5% potential alcohol. After careful pressing and fermentation, the wine matures for 48 months in bottle. On tasting, it has a brilliant cherry-pink colour with golden reflections, a very fine mousse and a floral aroma with hints of fruit and spices. It has an alcohol content of 12% vol. and residual sugar of 6 g/l. As an aperitif, it goes well with sushi, hot soup, fried fish, chicken salad, and spicy curry dishes. Production is 3,500 0.75-litre bottles a year.
Lady Gio Special Cuvee Brut, both the sparkling wine and the Rosé version, is a tribute to the winemaker's daughter Giorgia, a woman with the 3 "I's": intelligent, resourceful and independent (intelligent, ingenious and independent), just like her father.
