The 'Lady Gio' Special Cuvée Brut from Podere Pavolini is a sparkling white wine made from Pinot Noir and Ortrugo and is best enjoyed as an aperitif, or with fish, Mediterranean dishes, salads, and vegetables and pulses.
In the vineyards of Podere Pavolini, with almost 5 hectares of soils of Pliocene origin, the winemaker cultivates Pinot Noir and Ortrugo grapes for this effervescent wine. The vineyards lie between 200 and 250 metres above sea level, all facing west. He has opted for an espalier training system with a planting spacing of 2.3 x 1 metre and simple Guyot pruning, which makes managing annual operations comfortable. Harvesting is done strictly by hand in 20kg crates, when the grapes reach 10.5% potential alcohol.
Lady Gio Special Cuvee Brut, both the sparkling wine and the Rosé version, is a tribute to the winemaker's daughter Giorgia, a woman with the 3 "I's": intelligent, resourceful and independent (intelligent, ingenious and independent), just like her father.
This wine is aged for 60 months in bottle for the 2017 vintage, with an alcohol content of 12% vol. and residual sugar of 6 g/l. On tasting, it reveals a brilliant straw yellow colour with golden reflections and a very fine and persistent mousse. The nose is elegant with citrus notes and hints of aromatic herbs, while the palate is greeted with delicate bubbles and delicate floral and balsamic notes. It is perfect as an aperitif and with dishes based on raw or fried fish, salads, vegetables and pulses.
