Product description
The wine Larmes du Paradis is produced using the ancient technique of "Salasso", where after about 14-15 hours after filling the barrel, only the liquid phase is drained. This happens when the skins have separated and risen to the top to form a cap. The drained juice then undergoes a long fermentation at low temperature to preserve and enhance the fruity aromas.
The wine has a soft pink colour reminiscent of peach blossom. On the nose, fruity and floral notes emerge, with apple and pear aromas standing out in particular. On the palate, the wine is mineral with a pleasant freshness and good persistence. Alcohol content is 13%, while total acidity is 6.20 g/l and dry extract is 25.20 g/l.
The grapes for this wine are 70% Nebbiolo and 30% other white grapes, mainly Pinot Gris. The vineyards lie on steep, well-drained slopes rich in pebbles, facing south to south-east, at an altitude of 350 to 400 metres above sea level. These vineyards are located in the communes of Donnas, Perloz, Pont-Saint-Martin and Bard. The grapes are grown using the pergola system, with a density of 2,500 vines per hectare and a yield of 70 quintals per hectare.
The harvest takes place between mid- and late October. After harvesting, the wine is vinified in stainless steel tanks, where it matures for 2-3 months, followed by aging in bottle.
