'Les Terrasses de Palatin' is a refined Saint-Émilion that derives its character from the varied terroirs of the heart of this prestigious appellation. The vineyards benefit from a favourable southern exposure and consist of a mosaic of soils, from clay to gravel, with zones of loam and limestone. This diversity of soils contributes to the complexity and balance of the wine.
The assemblage consists mainly of Merlot, complemented by Cabernet Franc in varying proportions, depending on the vintage. Vinification and ageing take place entirely in stainless steel tanks, with the aim of creating an elegant and supple wine that retains its aromatic freshness. A special element is the partial fermentation with whole grape bunches (30-40% of the stalks remain in the tank), which adds a natural tannic structure and a subtle spiciness - similar to a chef's use of skins to add extra depth to a dish.
In the glass, 'Les Terrasses de Palatin' offers lively fruitiness and floral notes, with refined spicy accents. It is an elegant and approachable wine, which is excellent with white meats or a selection of fruity cheeses. A perfect choice for those looking for a Saint-Émilion with finesse and character.
