Located on the foothills of the Montagne Noire and at the foot of the Cévennes massif, this wine domain is in the AO C Minervois La Livinière appellation. This area, in the heart of Minervois and the natural region called "Petit Causse," is one of the first crus of the Languedoc.

The wine estate has carried the organic farming label since 1998. Grenache, combined with Syrah, is the main grape variety for L'Onoriva. The more than 15-year-old vines of this grape variety produce rare complexity and elegance on La Croix Martelle's terroir. Organic viticulture gives the Grenache grapes an invaluable freshness that is reflected in the wine's balance.
The harvest for this wine is the result of a careful selection of plots, with the harvest date determined after tasting the grapes. The harvest usually takes place in mid-September, when the grapes are perfectly ripe.
On arrival at the winery, the selected Grenache and Syrah grapes are destemmed and vinified separately. The maceration in the vat lasts about three weeks, during which the temperature is strictly controlled (25-26°C). In November, the wines of each grape variety are tasted and the final blend is chosen. L'Onoriva then matures for a year in the vat, where it develops its remarkable finesse.
L'Onoriva has a garnet-red colour and offers a range of flavours with notes of cherries on brandy and spice. The intense and warm aroma leads to a round and immediate attack on the palate. The wine reveals an exceptional balance between delicate tannins and ripe black fruit aromas.
This wine pairs beautifully with a fillet of beef accompanied by new potatoes. It also comes out excellently with a fresh pélardon from the Cévennes.
