The Marsala Fine I.P. Dry DOC is a dessert wine made from Grillo, Catarratto and Insolia that goes wonderfully well with chocolate desserts and dried fruits.
This wine, classified as vino liquoroso with denominazione d'origine controllata, comes from the province of Trapani, with vineyards in Marsala and Mazara del Vallo. The area has a Mediterranean climate with mild winters, limited rainfall and a very warm and well-ventilated summer. The vineyards are located a few metres above sea level and have medium-density, slightly clayey soils. The grape harvest is traditionally done manually and this wine is produced with a blend of Catarratto, Grillo and Insolia grapes. Vinification includes maceration of the grapes and fortification with aged wine alcohol, aged for at least 2 years in oak barrels. The wine is then aged for more than 12 months in 50- and 20-hectolitre oak barrels. With an alcohol content of 17% vol, the wine has an intense amber colour. The aroma is of ripe fruit with distinct notes of cherries, plums and figs. The taste is sweet, warm and harmonious, with a slight aftertaste of ageing wine. This wine is excellent as an aperitif and goes perfectly with chocolate desserts, pastries and dried fruits. The recommended serving temperature for this wine is between 12°C and 14°C in a dessert glass. For optimal preservation, the wine should be stored at a constant temperature of 16°C, with controlled light conditions.
