The Marsala Vergine Soleras DOC is a full-bodied dessert wine made from Grillo and Catarratto that pairs nicely with pastries, chocolate and spicy mature cheeses.
This wine carries the classification of vino liquoroso with denominazione d'origine controllata and comes from the province of Trapani, with vineyards in Marsala and Mazara del Vallo. The area has a Mediterranean climate with mild winters, limited rainfall and a very warm and well-ventilated summer. The vineyards are located a few metres above sea level and have medium-density soils, mainly composed of sandy and slightly clayey elements. The grape harvest is done by traditional and manual methods. This wine is produced by a blend of Grillo and Catarratto grapes. The winemaking process involves fermentation at a temperature of 18°C to 20°C, interrupted by the addition of wine alcohol. The wine undergoes maturation for more than four years in 80- and 50-hectolitre Slavonian oak barrels. With an alcohol content of 18% vol, the wine has a light amber colour. The aroma is ethereal with notes of cocoa. The taste is dry and soft with hints of dried fruit. This wine is excellent with pastries, cakes with pastry cream and spicy hard cheeses. It is recommended to serve this wine in a dessert glass at a temperature between 10°C and 12°C. For optimal storage, the wine should be kept at a constant temperature of 16°C, with controlled light, and the bottles horizontal.
