Modus Bibendi Bianco is a unique white wine made from the Grillo grape, a challenging but fascinating Sicilian variety known for its uneven ripening and varying yields. Grillo has historically not always received the appreciation it deserves and was often used for Marsala wine or as an imitation of Sauvignon blanc. In 2015, however, we decided to embrace Grillo's true character and create a wine that showcases its authentic Sicilian identity.
This wine offers a perfect balance between freshness and structure, with lively acidity and aromas of Mediterranean herbs giving a fresh and characterful taste experience. After gentle pressing, the wine ferments in stainless steel tanks and then ages for eight months on the lie, adding complexity and depth.
Modus Bibendi Bianco pairs wonderfully with seafood, raw fish and fresh cheeses, making it a versatile choice for a variety of dishes. With its fresh, citrusy and spicy notes and an alcohol content of 12.5%, this wine is a perfect expression of Camporeale's terroir and a tribute to the richness of Sicilian wine culture. Serve this wine at a drinking temperature of 12 degrees for the optimal taste experience.
