By carefully choosing the right harvest timing and aging the wine in Sicilian chestnut barrels, we highlight precisely the freshness, acidity and refined character traits of Nero d'Avola.
Fermentation takes place in stainless steel tanks, after which the wine is further aged in large chestnut barrels for a year. This process creates a fruity, full-bodied yet fresh wine that offers a harmonious balance between body and refinement.

Elios is the story of two friends, Nicola and Guido, who in 2015 decided to revive their Sicilian heritage by restoring their families' farmland to its former glory. Their passion for natural wine arose from dissatisfaction with their previous jobs and the desire to create something real, rooted in the culture and land of Sicily. They noticed that their region, in the province of Trapani, was dominated by industrial groups buying up grapes and olives at low prices. Instead of going along with this mass process, Nicola and Guido decided to make their own wine. With Elios, they wanted to do justice to their family lands and return dignity to crops that were once simply sold. Their focus is on native Sicilian grape varieties and natural production methods that bring out the authentic flavours of the island.
