The 2015 Capriano del Colle DOC Bianco Superiore is a refined white wine from Lombardy, produced by San Michele, a leading winery committed to preserving and refining the unique wine tradition of Monte Netto. Careful selection of Trebbiano grapes and thoughtful blending have created a wine that perfectly combines elegance and balance. Some of the grapes were affected by noble rot, resulting in a late harvest with an intense concentration of aromas. After gentle pressing, the wine underwent a 15-day fermentation in stainless steel tanks at controlled temperature, followed by aging in concrete vats and a further 12-month refinement in bottle.
The aroma is delicate and layered, with floral notes and subtle herbal accents. The palate has a powerful structure with lively acidity and a mineral touch that immediately enriches the palette. Despite its intense onset, the finish remains refined, elegant and in constant evolution, leaving this wine with a unique and lasting impression.
Thanks to its versatility, this wine is an excellent companion to shellfish, refined preparations of white meat and risotto with saffron, where its freshness and complexity blend perfectly with the flavors of the dish. Serve at a temperature of 10° - 12°C and open the bottle at least half an hour before pouring to fully enjoy its character.
