The 'Papotta' Vino Bianco Zibbibo IGT Terre Siciliane is a white wine made from 100% Zibibbo that is best drunk as an aperitivo and with seafood. Papotta, produced by Abbazia San Giorgio, is a special Vino Bianco ancestrale with the enchanting flavour of Zibibbo grapes, thriving on the terraces of volcanic soils on Pantelleria. The vintage is 2022, with an alcohol content of 12% Vol. Production is limited to just 2,000 750ml bottles, making it an exclusive discovery for wine lovers. The vineyards, covering an area of 2.5 hectares, are located on volcanic soils that tend towards a loose structure. These terraced vineyards, poor in organic matter but rich in micro-elements, contribute to the unique characteristics of the Zibibbo grape. The Zibibbo vitigno, 100% represented, thrives on the alberello pantesco, recently recognised by UNESCO as Intangible Heritage of Humanity, with an average age of 60 years. The winery follows eco-friendly practices with biodiverse farming techniques, using no chemical fertilisers or synthetic products, and no treatment in the vineyard. Papotta production is unique to the Zibibbo vineyards on Pantelleria. A specific pruning technique is used in spring to encourage second flowering, resulting in a late harvest in October. The grapes are harvested by hand, carefully pressed and undergo natural fermentation thanks to the yeasts present in the skins. After a short maceration period, the skins are separated. Before the end of fermentation, the wine is bottled and completes the final stage of fermentation in the bottle. The bottles are stored horizontally for a maturation period of at least a year. Papotta's exclusive ageing process takes place exclusively in the bottle and lasts a minimum of 18 months before being released on the market. Papotta, a wine of the ancestrale or Petnat type, goes perfectly with aperitifs with seafood, fish dishes, vegetables, pizzas and savoury pies. Serve this particular wine at a temperature between 8-10°C for the ultimate experience.
