The Prosecco DOC Extra Dry Biologico is a sparkling wine (prosecco) made from the classic prosecco grape varieties that is perfect for drinking as an aperitif. This prosecco is a sophisticated wine that makes the most of the fertile soils of our region. The bouquet is subtly fruity, while the balanced palate contains elegant notes reminiscent of apple and white peach. Our vines are located in Meduna di Livenza, Treviso - Veneto, and Pasiano di Pordenone, Pordenone - Friuli Venezia Giulia. We cultivate the Prosecco grape variety according to the Sylvoz system. The harvest period runs from 20 September to 10 October, with a maximum yield of 180 qli/ha. White vinification involves gentle pressing to separate the grapes from their skins, followed by static decanting and temperature-controlled fermentation. Second fermentation in large tanks using the "Matteotti method" creates the characteristic pearlisation and creamy mousse of this Prosecco. With an alcohol content of 11.5% vol and a subtle residual sugar of 15 g/lt, this wine offers a refreshing sweet-sour balance. The fine and persistent bubbles form a lively dance in your glass, while the mousse is silky and creamy. The bouquet is characterised by aromas of flowers, roses and fruity notes of white peach, pear and apple. The palate is harmonious and delicate, with a slight aromatic undertone.
