The Valdobbiadene DOCG Follalba Brut is a sparkling wine (prosecco) made from Glera, Verdiso and Perera grapes and goes well with distinct dishes such as radicchio, asparagus and seafood.
This prosecco has a straw yellow colour with a fine and persistent perlage and a creamy head. On the nose, it reveals a certain complexity of aromas including green apple, pear, pineapple, nuts and a bouquet of flowers such as chamomile, acacia and sage. On the palate, the wine is consistent, fresh and balanced, with a subtly sweet note balanced by both saltiness and freshness.
The grapes are harvested by hand in Santo Stefano, Valdobbiadene, from vineyards on hills facing east and west, at an altitude of 300 metres above sea level. The soils are shallow and clayey with limestone and marl. After manual harvest and selection of grapes, vinification is carried out with controlled fermentation and maturation in cement tanks.
The wine undergoes secondary fermentation according to the Metodo Martinotti, resulting in an alcohol content of 11.5% vol and residual sugar of 7 g/l.
