The Valdobbiadene DOCG Follalba Extra Brut is a sparkling wine (prosecco) made from Glera, Verdiso and Perera grapes that can be drunk well as an aperitif, with lighter meals and vegetarian dishes.
This prosecco has a straw yellow colour with green reflections. The wine has a nice creamy head with a persistent pleasant perlage. From the glass, aromas of apple, grapefruit, lime, acacia flowers and wisteria jump out. Some spicier notes of sage and nettle can also be detected. The mouthfeel is vertical, fresh, very direct and dry. The acidity and saltiness of the wine are balanced by the body and the bubble is well integrated into the wine.
The grapes are harvested by hand in Santo Stefano, Valdobbiadene from vineyards on hills facing east at an altitude of 300 metres above sea level. The soils are shallow and clayey with limestone and marl. After manual harvest and selection of the grapes, vinification is carried out with controlled fermentation and maturation in cement tanks.
The wine undergoes second fermentation according to the Metodo Martinotti, resulting in an alcohol content of 11.5% vol and residual sugar of only 2 g/l.
