The 'Raboso Ancestrale' Veneto IGT Biologico from Terre Grosse is a sparkling Rosé made from Raboso Piave and is best enjoyed with fried food, pizza and cold summer dishes.
A centuries-old winemaking method results in a surprising 'sur lie' rosé, tantalising the taste buds with a lively bubble and refreshing hints of small red fruit.
At first sight, it appears veiled, with an intriguing deep pink colour made even more vivid by the fine and persistent mousse revealed in the glass, accompanied by a compact and creamy foam. On the nose, the wine immediately expresses itself with soft notes of bread crust, barely perceptible, which soon give way to intoxicating aromas of raspberry, still unripe wild strawberry, pomegranate and pink grapefruit, anticipating a refreshing acidity that is already expected on first encounter. A lively acidity, characteristic of the Raboso grape, is expressed in all its vibrancy on the palate, harmoniously blending with the red fruits observed earlier in the nose. The wine's complexity and finesse are enhanced by its prolonged fermentation, which continues to develop over time.
The wine goes well with an original aperitif, fried dishes and cold summer dishes. Also worth trying with pizza, especially when prepared with buffalo mozzarella. The wine can be served clear or with sediment.
