Product description
The 'Retrò' Vino Rosso is a biodynamic red wine made from 100% Dolcetto that is best paired with pork stew dishes and grilled vegetables. The wine is certified organic and biodynamic. Less than 600 bottles of it are made annually.The grapes for this wine were hand-picked and carefully transported in small crates, with an emphasis on quality. With a yield of less than 30 quintals per hectare, the grapes are particularly concentrated and flavourful. The fermentation and maceration of this wine are remarkably artisanal. The grapes are foot-pressed and then macerated along with the stems. Fermentation is spontaneous and carried out in an underground cellar with wild yeasts, which contributes to the wine's unique flavour. The maceration lasts 14 to 20 days, resulting in a deep colour and rich flavour. After vinification, this wine has matured for 12 months in old tonneaux/barriques, followed by prolonged aging in bottle before being released to the market. The alcohol content is 13.66%, with a refreshing acidity of 5.70 g/l and a dry extraction of 30.5 g/l. The total sulphite content is minimal, just 9.0 mg/l. To fully enjoy the flavour, it is recommended to serve this wine at a temperature between 16°C and 18°C. The grapes come from different parts of the Rocca Grimalda hills, which contributes to the complexity and depth of this wine. This wine embodies the essence of artisan winemaking and is a real treat for gourmets.

Rocca Rondinaria is a biodynamic and organically certified family business from Piedmont, led by Lucesio and Giovanna. In 2004, the couple decided, along with their children, to take an exciting step into the world of winemaking. Initially with the help of local winemakers, and now entirely on their own, they produce biodynamic wines from Timarosso, Barbera, and Dolcetto beside the iconic Rocca Grimalda castle in Monferrato. Annually, they produce fewer than 6,000 bottles.
