The 'Rêves is an organic white wine made from Grenache Blanc and Roussanne that can be enjoyed with grilled fish dishes and salads with fish or seafood.
The wine is made for daydreamers who like to look over vineyards that reach further than the eye can see. This wine has a bright and brilliant colour and offers a fruity and elegant experience with nice acidity and plenty of freshness.
The wine won a gold medal at Gilbert et Gaillard in 2016. The wine comes from the Aspres area at the foot of the Pyrenees, where Trouillas' soils are loamy-clay soils with a very stony surface. The vineyard is sustainably managed and benefits from a good location on the slopes of Mas Deu and on the terraces between Trouillas and Terrats. The wine is made from Grenache Blanc and Roussanne grapes, with a limited production of 5,000 bottles. Vinification includes an early harvest and skin softening in a pneumatic press, followed by low-temperature fermentation.
The wine then ages for three months on lees in stainless steel cuves with bâtonnage, adding to its complexity and texture. The wine has a bright golden colour. The aroma is subtle and opens with notes of exotic fruits, citrus and white fruits. The attack is lively and sparkling, with a powerful and fresh palate, intense citrus aroma and excellent balance. The wine can be kept for up to three years.
