Alcohol: 12.5% variable depending on vintage
Romas: Fresh and floral aromas of dog rose and peach blossom.
Taste: Fragrant and consistently acidic wine. Fresh on the palate where a harmony of ripe fruit predominates. The finish leaves a pleasant savoury feeling on the palate.
The Merlot and Sangiovese grapes are harvested when acidity is still high and the skin is just starting to give up its colour. They are collected early in the morning, put into the press and soaked for a few hours at a controlled temperature. The colour of the must is constantly monitored and only drained with gentle pressing when it starts to intensify. Fermentation by indigenous yeasts takes place in steel. The finished wine is bottled after some decanting and a light filtration to preserve the fresh aromas and colour of the freshly harvested grapes.
