The 'Rossetto' Rosato Lazio IGT is a unique and artisanal rosé wine, sourced from vineyards at an altitude of 436 metres in the hills of Lazio. This particular blend combines 80% Procanico, sourced from nine-year-old vines, with 20% Violone, harvested from 50-year-old vines. The vines grow on a volcanic soil with tufa and sand layers, creating a striking minerality and freshness.
Harvesting takes place manually in the early morning hours, after which the carefully selected grapes are taken to the cellar in small crates. Vinification begins with spontaneous fermentation of the Procanico. Once this fermentation is underway, whole clusters of Violone are added to the fermenting must, giving the wine a unique texture and aroma development. Fermentation takes place without temperature control in stainless steel tanks, and at the appropriate time the Violone grapes are removed again. The wine then matures for 11 months on fine lees in stainless steel, followed by a minimum bottle ageing of 6 months. The wine is bottled unfiltered and unclarified, retaining its natural character and pure expression.
Rossetto has a deep and vibrant colour, with rich aromas of ripe red fruit, floral notes and a subtle spiciness. The palate is fresh, structured and layered, with a delicate balance between fruitiness and elegance. Perfect as an aperitif, but also an excellent companion to light meat dishes, grilled fish or Mediterranean dishes. Serve at 10-12°C and enjoy the authenticity of an artisanal and terroir-driven rosé.
