The '-S- Fumé' Sauvignon Blanc Trocken is an exceptional white wine with character and depth, from a chalky vineyard on a sheltered southern slope. One of France's oldest noble grape varieties, this Sauvignon Blanc is known for its distinct and fresh aromas of gooseberry, blackcurrant, freshly cut grass and green herbs. The wine owes its typical expression to the natural content of pyrazines, which provide a spicy, lively olfactory experience.
The grapes were harvested by hand on 21 September 2023 after careful pre-selection, at a must weight of 92° Oechsle. After a brief skin soaking and gentle pressing, the must was transferred via gravity to the historic vaulted cellar. Here, spontaneous fermentation took place in 500-litre French tonneaux, followed by maturation on the fine groin with batonnage for two months. This method creates a wine with structure, complexity and subtle wood influences without dominance.
The wine presents itself with an intense nose in which a reductive tension combines with aromas of dill, ripe tropical fruits and spicy finesse. On the palate, it shows powerfully, with a savoury, layered structure and a long, mineral finish. This Sauvignon Blanc Fumé is not only an impressive solo wine, but especially an outstanding companion to gourmet dishes such as grilled fish, creamy cheeses and vegetable dishes with spicy accents. Vinified with respect for terroir and tradition, and bottled in an elegant Burgundy bottle with natural cork.
