To produce the Sagitta wine, only Barbera grapes are selected from vineyards with the best exposure. The grapes are harvested in late September and, after destemming, undergo a 3-day cold pre-fermentation maceration to ensure greater extraction of polyphenols. In early December, once malolactic fermentation is complete, the wine matures in 25 hectolitre French oak "botti", where it rests for 2 years. Once bottled, the wine remains in our underground cellar for at least 6 months before release.
