Eco-organic wine Drupe: Sangiovese Colour: Intense ruby red Alcohol: 13% variable, depending on vintage Romas: Aromas of cherries and ripe plums typical of the blend, albeit accompanied by the aromatic complexity of a vineyard older than 40 years. These aromas meld perfectly with the scent of wood, creating an ideal balance between fruit and roast. Taste: The same aromatic balance is found immediately on the palate. In fact, the initial impact is lively and decisive, while fruity aromas are present in the finish, enhanced by a strong hint of clove that accompanies the wine's tannicity.
The quality of the old Sangiovese plants with a very low yield of around 40q/ha was directly exploited for the production of Sariano. The grapes are carefully selected in the vineyard through low-production pruning and selective thinning. In late autumn, the harvested grapes are immediately destemmed and fermented, at a controlled temperature, with indigenous yeasts in steel tanks of about 25 hl. At this stage, the only interventions are the only air changes, if needed. At the end of fermentation and prolonged maceration, which can range from 25 to 45 days, depending on the quality of the skins, part of the wine is transferred to 25-hl oak barrels and undergoes malolactic fermentation. Together with the lees, the wine remains in the wood until March the following year. After initial racking, the wine returns to the wood where it remains until bottled, which takes place after a light filtration.
Jaar 2018 is meer dan goed. Een Borello is beter maar kost dan minimaal het dubbele. Van de carpaccio tot een pasta maar zeker kalfs of rundvlees is deze wijn een uitermate goede begeleiding.
