The 'Sarrocchino' Toscana IGT Sangiovese from Tenuta Scrafana is a red wine made from 100% Sangiovese and is best enjoyed with Milanese dishes, rabbit, lamb, mature cheeses and cigars.
The 'Sarrocchino' Toscana IGT Sangiovese is a red wine made entirely from Sangiovese grapes. The grapes are hand-picked and vinified separately in cement and stainless steel tanks at a controlled temperature of 25ºC (77°F). Maceration lasts an average of 25 days, with daily pumping and délestages to achieve greater extraction. Malolactic fermentation is followed by ageing in wood, with barriques and large French oak barrels, for 30 months. This wine has a ruby red colour with light garnet hues, bright with present arches. The bouquet is immediate with pleasant and elegant floral notes of violet, blackberry, black plum and cherry, accompanied by spicy hints and sweet notes of tobacco. The palate is enveloping thanks to great texture and freshness in good balance with present but not intrusive tannins, it runs dynamically through the palate to finish in a long-lasting persistence with noticeable herbal and vegetal notes. The alcohol content is 14% vol. Perfect to pair with cutlet Milanese, braised rabbit with olives, baked lamb and mature cheeses. Also great with cigars.
"Sarrocchino" takes its name from an ancient cloak worn by pilgrims in the Middle Ages. The ancient Benedictine monastery of Sant'Angelo alla Ginestra in Montevarchi hosted many of these travellers on their journey to Rome or the Holy Land, along with the keys of St Peter's or the palms of Jericho pinned to their "Sarrocchino" cloaks.
